It's Mardi Gras!!


Laissez les bons temps rouler!


It's Mardi Gras!! This is one of our very favorite Mardi Gras recipes from one of our very favorite Cajun restaurants in Louisiana--Mulates. Soooo tender and soooo tasty-----makes us wish we were there catching beads and eating amazing food!!!"

Mulate’s Fried Chicken

8 eggs
1 cup light beer
2 Tbsp Mulate’s Cajun Seasoning
2 tsp cayenne pepper
1/2 tsp baking powder
4-5 lbs chicken, cut up
3-4 cups flour
3 cups peanut oil for frying

In large bowl, mix eggs, beer, Cajun seasoning, cayenne, and baking powder. Rinse and dry chicken. Place chicken in marinade. Place bowl in refrigerator and marinate overnight.

Place chicken in flour, and coat well. Fry in oil at 350 degrees for approximately 15minutes.
